For the Feast for Thought Quest which is required as part of the Suture Self Trophy, we are tasked with collecting 16 local dishes from around the map, which is easier said than done. The quest requires some initial setup, and some fairly advanced progress in the main story to even start.
The Feast of Thought quest is one of the many collectable quests you'll find in Assassin's Creed Shadows. You'll need to head to all the food merchants to sample the local dishes from each of the main regions of the map. The Feast for Thought quest is automatically accepted and added to the objectives board as you progress through the main story. You can find it under the People of Wakasa objective and the character Hong. Much like collecting the Tea Bowls for the Tea Room, you need to gather 16 food quest items by visiting each food vendor in the game.
Once completed, the quest will award you The Collector Trophy, assuming you did it before the Tea Bowls quest.

Find local dishes - All Locations for Feast For Thought Trophy
To embark on this culinary adventure, you will need to find the locations for all 16 local dishes, each offered by one of the 16 unique food vendors scattered throughout the map. This quest becomes available after you complete the mission to take out "The Fox" in the main storyline. During this mission, you will be tasked with searching for Hong, an important character for us later. Hong’s whereabouts are outlined in the details provided below, and we'll be coming back here later.
Below is where you can find him to start the quest.

You won't return to Hong until the end of the quest chain. Once "The Fox" has been dealt with, you will return to Hong as part of the end quest. At this point, you will be told you've "unlocked multiple quests," one of which is the People of Wasaka. From here, you can find Hong and finally start your quest for the Feast For Thought Trophy.
The quest will task you to "talk to Hong", who is at the same location as he was before. When you find him, you can start the quest and will be presented with a few options.

It won't matter what option you pick; either way, it will lead to you being given the quest to locate all the Local Dishes. The quest is pretty simple, and just requires you to do a lot of traveling. If you are level 40+, which is advised, you've probably already seen 90% of these. As you can see from our image, we even already had 4 of the local dishes.
Pro tip: Turn on the Guided Exploration Mode for this quest to reveal all locations, you can see the result of that below.
Below is the location of each of the 16 Local Dishes. As we said in the pro tip above, turning on Guided Exploration Mode will make this quest a lot easier.
Pro tip: Guided Exploration disqualifies the user from getting one trophy, the Scouting Mission, which requires you to actually use the Scouting feature to complete a quest.

After gathering all 16 local dishes, return to Hong in Obama. The order in which you collect the Local Dishes doesn't matter.

Once that's done, you'll get your reward. If this is your first complete collection, you'll also get The Collector Trophy to pop as you hand it in.
You've now completed one part of the requirements for the Suture Self Trophy. If you've not done that already, you will also need to complete the requirements to unlock the Tea Room.
FAQ
Can you do this with Guided Exploration off?
Yes, it's just a lot harder to find the locations. By having it on, you can travel around the world, most likely with fast travel and buy the Local Dishes easily.
When is the Earliest I can do this Quest?
You will need to do "The Fox" main story hunt first, meaning this quest will be done around 40+ during Act 2.
How much does each Local Dish cost?
Nothing, the local dishes act as quest items, so the NPCs just hand them over to you.
